Chole Bhature
Spiced chickpeas with soft, puffed bhature make this one of the most satisfying Punjabi comfort meals in the lineup.

Ingredients
2 cups chickpeas (cooked)
2 onions (finely chopped)
3 tomatoes (pureed)
1 tbsp ginger-garlic paste
2 cups flour for bhature dough
1/4 cup yogurt
1 tsp garam masala
Salt to taste
Instructions

Cook onions down until golden, then add ginger-garlic paste.

Add tomato puree with spices and cook until the masala turns glossy.

Stir in chickpeas with a little water and simmer until the gravy thickens.

Make a soft bhature dough with flour, yogurt, and seasoning, then rest it.

Roll the dough into discs and fry until puffed and golden.

Serve the hot bhature with spicy chole, onion salad, and pickle.

Mash a spoonful of chickpeas into the gravy while simmering to naturally thicken the chole.
